Coconut Macadamia Nut Butter

First step is admitting you have a problem.

I am powerless around nut butter.

Second step is understanding your actions have negative consequences.

The addiction is making me poor.

Thirdly, you must take action on your dependence.

Find a new addiction that completely blows your previous addiction out of the water.

Lastly, you must help others with a similar addiction overcome it.

Share the recipe so others can make similar changes in their lives.

In all seriousness, I eat almond butter like it’s yogurt and something had to be done about it. At $10 a pop it wasn’t a sustainable addiction. Then again, macadamia nuts aren’t the cheapest nuts in the basket, but really I just wanted to switch things up.

Macadamia nuts are buttery rich little jewels of heaven. And coconut was just a logical addition, when is it not? If you have nut butter dependency issues, you may be advised to avoid making this.

At least if I squint, this one looks like yogurt.

Coconut Macadamia Nut Butter

  • 1.5 cups raw, unsalted macadamia nuts
  • 3/4 cup Coconut Chips (or shredded coconut)
  • Pinch of salt

Place macadamia nuts into your food processor and blend until a butter is formed, about 4 minutes. Add in 1/2 cups of coconut chips and pinch of salt and continue to blend until you have a smooth nut butter. Stir in the remaining 1/4 cup of coconut chips to give it some texture. Makes over a cup of nut butter.

It’s like you’re inside my brain… Literally addicted to nut butter here. To the point where I can’t have any kind of nuts in the house because I’ll just put them right into the food processor, blend ‘em up, and go to town. But this combination sounds so so delicious! Perhaps one day… haha

“Addiction” is kind of an understatement for me. I am completely obsessed with nut butters! I even get kind of upset when someone (*cough* my hubby *cough*) puts a spoon into the sink… and it still has nut butter on it!!! Not okay. I am super excited about this coconut macadamia nut butter though! Talk about amazing. :) Happy 4th!

haha oh yes, no waste! happy 4th to you too!

Last year I made muffins with macadamia nuts and spent something absurd like $10 on what seemed like a cup of them. I’m looking at that jar of deliciousness and just seeing $ signs! haha Regardless though…I bet this is AMAZING! Happy 4th!

hah yeah they aren’t cheap sadly, but once in a while they are a good treat. 2 cups was about $7 at my store, not toooo bad I suppose.

Whole Foods has almond butter for 5 dollars a jar….I know this because I am an addict too. I literally can’t have it in my house or its gone in a few days!

I have so many macadamia nut recipes I want to try out but can never bring myself to purchase them. I Just need to buy them in bulk somewhere and get it over with!

8 katie July 5, 2012 at 7:27 am

amazon! pretty sure they have a huge bag of raw ones.

9 Emily @ Munchies 'n' Marvels July 4, 2012 at 10:22 am

Only makes a cup? That’ll be gone in a day ;)

I love almond butter, but I usually love it on something. Nut butter shovels of choice are either apples or celery. I’m currently out of produce so that has curbed my nut butter binging for now.

10 katie July 5, 2012 at 7:28 am

it’s nearly gone yep! SO tasty I can’t stop.

i refuse to let myself buy nut butters out of fear of addiction, but this looks amazing– proly has something to do with those spectacular shots you captured! i’m only slightly addicted to hard boiled eggs, and starbucks triple espressos with whipped cream on top. whoops.

12 katie July 5, 2012 at 7:28 am

eggs, another addiction. But not in the same way as this stuff haha.

Yum. I bought some white chocolate macadamia nut butter in Hawaii a couple of years ago. Worth every penny :-)

14 katie July 5, 2012 at 7:29 am

wo. gotta get my hands on that. I don’t loveee white chocolate but it just sounds like it would work with macadamia nuts.

Oh boy. I’m right there with you on nut butter – especially Trader Joe’s creamy salted PB and sea salt almond butter (needless to say, I’m way into the salt, too). Coconut butter is another one, but I can’t afford the store-bought stuff.

Now, I might need to go get a blender for this recipe…

These pictures and homemade nut butter remind me of something I just posted :) My homemade PB seriously is the best PB I’ve ever eaten and I didn’t “do” anything. I just let the nuts speak for themselves and get blended.

Your butter sounds awesome! And a budget-saver, too!

17 Brittany @ GOtheXtraMile July 4, 2012 at 3:07 pm

yummmmmm! I love every type of nut butter pretty much. It’s not normal. I’ve been obsessed with sunbutter lately.

18 Lea July 4, 2012 at 5:54 pm

I. Love. Nut butters. Seriously I’m going through two jars a week, it’s starting to become a problem. I usually stick to peanut butter because it’s cheaper (under $3 at Trader Joes, yeaaaahh) though maybe if I bought the more expensive stuff I could make it last more than 4 days…

I’ve been wanting to try my hand at making my own nut butter though and this recipe looks awesome! I might have to try it!

This timing could not be more perfect since I literally just finished my breakfast which was espresso mug filled with sunflower seed butter and a spoon! I only wish I was eating yours, still have yet to sprulge on macadamia nuts but you may have nudged my addiction in a whole new direction :)

20 Joelle (on a pink typewriter) July 5, 2012 at 12:46 pm

Haha love this.. I’ve felt that way about almond butter before. ;)

21 Alex@Spoonful of Sugar Free July 5, 2012 at 5:42 pm

Do I have a nutbutter addiction? Yes. Mostly to peanut butter, but sometimes coconut, sunflower, or almond take some of the spotlight…yummy…

22 Atima July 6, 2012 at 12:58 am

This looks awesome! And incredibly easy. I’m wondering what food processor you use? I just graduated from college, am moving out of my parents’ home, and need to get new appliances for my own paleo-friendly kitchen. :)

23 katie July 6, 2012 at 10:25 am

I use a cuisine art food processor and it works really well. I would go with something bigger than a magic bullet out of personal experience.

24 Kayla July 6, 2012 at 6:00 am

i have a nut butter addiction too i will admit :) i was going through a jar of nut butter ever three days.. that’s bad. hahaha

25 katie July 6, 2012 at 10:25 am

that makes me feel normal :)

26 Meg July 7, 2012 at 9:39 am

mmmm I can only imagine how heavenly this tastes

27 Kirsten July 10, 2012 at 3:08 pm

Whoah I never thought of adding shredded coconut to nut butter. That is genius! Making some coconut almond butter… pronto.

28 katie July 10, 2012 at 7:55 pm

Yes I made coconut almond butter a few months back too, it add a good little crunch too.

29 Molly July 11, 2012 at 12:49 am

HEH-VEN (heaven)
Wow I want all a dat!
I just tried Artisanas macadamia cashew butter and have gotta say that ones up there..sooo smooth. But this is way cheaper! Must try..

30 katie July 12, 2012 at 11:44 am

Just recently tried cashew butter also (tastes like cake!) so I can only imagine the two combined, wow.

31 Jennifer O July 15, 2012 at 1:28 pm

Addicted to nut butters too. Went through a jar of chocolate almond butter in a week and my new favorite is “Nutzo” (a 7 nuts and seeds butter that is crazy crunchy-seedy–I love texture). Never have had the motivation to make it, but macadamia nut butter sounds divine.
