Paleo Coconut Flour “Oatmeal”

It seems when people are missing something from their diets, whether it be by choice, intolerance, or allergy, finding a replacement becomes the focus. Paleo cookies, pancakes, and breads have taken over the world, and dairy free milk practically flows from cows udders.

When I was a vegetarian I would eat faux meat products. Tofu dogs? Chik n’ nuggets made from isolated soy protein? If I met me then, I wouldn’t know me…

These days I’m still looking for replacements. Rice made out of cauliflower. Pasta made from zucchini. Pizza crust made out of eggplant.

Oatmeal Made From Coconut?  A little more appealing than smart dogs and tofurkey.

Coconut Flour Peaches n Cream “Oatmeal”

A grain, dairy, and sugar free comforting breakfast that reminds me of my oatmeal eating days. 

  • 1/4 cup coconut flour
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/2 ripe banana
  • 1 Egg
  • Salt, Cinnamon, Vanilla
  • 1 Peach for topping

In a pot over medium heat combine coconut flour, coconut milk, water and thinly sliced 1/2 of a ripe banana. Stir continusly until the banana has fully incorporated into a smooth texture. Crack the egg into the pot and continue to stir until fully combined. 

Add a pinch of salt, cinnamon, and vanilla. Continue cooking until an oatmeal like texture has been reaches, about 3-4 minutes. Do not overcook or it will become dry. 

Place in a bowl and chop up one peach for a topping. Finish it with a drizzle of coconut milk and optionally maple syrup or honey.

Oh, I love this. Coconut flour can be tricky, I love when others do the dirty work of testing it out in things. I hate wasting it in stuff that fails with it’s price tag! ;) With my bowl of overflowing CSA peaches, this is happening this week.

This is so creative! Do you think it might be worth a try with a flax or chia egg instead of a real egg? I love that you’ve found another use for coconut flour. :)

try it out! the egg gives it a custardy texture and holds it all together, but it may just work.

I tried this with a flax “egg” for dinner last night, as well as almond milk instead of coconut milk – so good! The texture kind of reminded me of cream of wheat, which I love. I definitely see this being a new staple recipe for me.

yayy, a few people were wondering if it would work with a chia or flax egg. Awesome to know that it did work for you and I’m glad you liked it too. es the texture is almost porridge like, very comforting.

I used to eat a mostly-vegan diet for a couple of years, so I totally remember (as recent as 2 months ago) eating seitan-based jerky, loving Trader Joe’s soy-chorizo, making burgers with “meatless ground”, and topping a pizza crust with Quorn “breaded chicken”. Hell, if you look at my blog you’ll see a good number of recipes containing these things! Yikes! And I wondered, back then, why I suddenly developed acid reflux and symptoms of IBS that I never had before eating all of this excess wheat!

I can’t wait to try this “oatmeal” recipe. I just need bananas and I can have a new breakfast option!

ewwwwww if I never see another boca burger again it will be too soon. I can’t believe there was a time when I thought I enjoyed “tofurky”. Gaggg. I could never give up oatmeal, but this would definitely make an awesome snack option or me. I’ve really been digging coconut flour lately.

p.s. that last picture is pure art! did you edit it that lighting effect or is it natural? either way, I want that picture framed and in my new kitchen. You really should start considering selling your photos, Katie!

Truth be told, even though I eat meat now, I have a special place in my heart for veggie burgers left over from my vegetarian days. In my defense, though, now I eat the ones made from beans and actual veggies :-)

Your pictures make me wanna jump at the screen and eat everything! haha. What a beautiful photoshoot, and great recipe! I use coconut flour quite often~and I have to say that it’s always hit and miss when it comes to texture. I can see how it’s delicious as “oatmeal”! :)

Do you think this process would work with peanut flour and almond milk, instead of the coconut flour/milk combo?

I think the ratios would definitely change because coconut flour soaks up a lot of moisture but you could defeintely give it a try and report back!

I made a version with pistachio milk and pistachio flour. I used 1/3 cup flour to 1/2 + 2 Tablespoons of liquid, and it was perfect, if not on the “soupy” side. My flour was “soggy”, so that probably influenced the ratio, too.

You seriously cease to amaze me!

The weight loss office that I just started working at emphasizes a very “paleo-type” diet with high protein, low carbs, & no sugar. Granted, I’ve begun stalking paleo recipes, MDA, your blog, and those sites you gave me all over again. Maybe one day I’ll actually get the nerve to try it out haha :D

yes there are a bunch of variations of oatmeal minus the oats out there, although many are nut based which seems like it may be a bit heavy for me. But good luck experimenting!

Before I started eating paleo, I would have oatmeal for breakfast every single day, without fail. It took me so long to try paleo because of that very reason. I was so sure I couldn’t give up my oatmeal! Alas, I feel a heck of a lot better starting my day off with eggs than I did with oats. But man oh man, I will have to try this out.

I eat eggs 69/70 days for breakfast with an exception here and there. I always feel my best with them though.

Yeah the sweetness really was perfect. And I have no doubt that if you do the Whole30 you’ll be okay!! I had a slip up with honey but honestly other than that and some cheese cravings it hasn’t been too hard at all! Ps your photography is beautiful, forgot to mention that

funny how much diets can change, my diet is always changing but finally feel I am coming to love my new lifestyle and feel it is right.

I feel the same way about faux meat as I do about real meat – ick! Actually faux meat creeps me out even more – at least meat IS meat, you know what I mean?!

This looks gorgeous, I have coconut flour but have been having problems of thinking of what to use it for! One of the reasons I’ve stopped being vegan is because I felt that my diet was getting to full of processed crap for replacing other foods – especially soy products – soy yoghurt and soy cheese, which for me at least just didn’t feel right. I’d rather eat a small amount of organic diary instead and get more protein from eggs rather than processed products any day. Beautiful photos too :-)

Yup. I’m always trying to recreate and find replacements for foods I can’t or shouldn’t have. I’m always up for the challenge! In fact, I think it’s fun. Even better when it’s successful. This looks really good! I dig it. :)

I’ve been focusing a lot these days on getting back to real, fresh produce just as you are. But I really need to ask – aren’t you worried sometimes about consuming too much coconut/coconut-derived products? I know the whole nutrition facts etc.etc. behind this, but isn’t this just over-consumption that could pose certain health issues in the long-term? Coming from an Asian country where coconut products are consumed in fair amounts (though I have to say, not as much as what I see on the blogosphere nowadays), I’m just curious to see what your opinion is (:

Honestly no, I’ve never heard of any reason to be nervous about too much coconut products (other than gaining weight potentially). I go through 2-3 cans of coconut milk a week, some coconut flour here and there, and maybe some shredded coconut once a week. I don’t think that’s really over doing it.

I’m definitely not a fan of faux meat – it’s overly processed, tastes like rubber, and is just gross, haha. I prefer wholesome, lean, REAL animal products.

I have not tried. Another commenter mentioned trying it out with a flax or chia egg which could potentially work. Let me know if you give it a go.

I was going through an insane sugar craving (been Paleo for a few months and only struggling with the lack of sugar) when I read this and instead of running to the store to buy more sugar coated sahales, I made this! I have never cooked with coconut flour or any flour because I’ve never baked before! It was a calming wonderful first time experience. Ha! I’m sure I sound ridiculous but doing anything in the kitchen is a big step for me. Thank you KATIE! You inspired a great moment in my life. :) Oh, and it turned out delicious!!

I just made it, but made a couple of variations. I added 2 Tb of chocolate protein powder to it, and used egg whites, and sweetened with stevia. Its quite good! Thanks for something different

hmm it definetely felt like a “carby” warm breakfast to me… but I am not used to those kinds of breakfasts anymore so it may be really very different, if that makes sense. Give it a try and see how you feel after and for the rest of the day and what your cravings are like.
