Twice Baked Sweet Potatoes with Roasted Garlic Puree

I was out running errands with my Mom the other afternoon when hunger struck us both so we stopped into the grocery store salad bar to try and keep things healthy.

And apparently their idea of healthy is slimy cubed deli ham and white iceberg lettuce. You know those types of bars, where it looks like food they wouldn’t even serve on the cheapest flights out there.

So I grabbed several hard boiled eggs and sad looking vegetables and wandered to the antipasto bar to fill a large container with roasted garlic cloves. Lunch.

Clearly the sweet, caramelized roasted garlic was the highlight of my meal week. I inhaled about 3 bulbs worth and reeked of garlic for the next 24 hours. It was so very worth it.

Then I made this.

And I may never smell the same again but it was so very worth it.

Twice Baked Sweet Potato with Roasted Garlic Puree

You could very well stop after making the sweet garlic puree but why not stuff it into a slow baked sweet potato. Basically a 2 ingredient recipe that’s perfect for the changing seasons. Grain, dairy, sugar free recipe. 

  • 1 cup Garlic cloves (I used a container of pre-peeled cloves)
  • Olive Oil, Salt and Pepper
  • 3 Medium to Small Sweet Potatoes 
  • Fresh Thyme

Preheat oven to 375 degrees. Lay out cloves onto a baking sheet and toss with a touch of olive oil and salt and pepper. Cover with tinfoil and roast for about 30 minutues, until brown and caremilized. 

Meanwhile, poke the sweet potatoes several times with a fork, wrap in a paper towel and microwave all together for 3-4 minutes until just a little soft. Then wrap them in tinfoil and bake in to oven for 30-40 minutes. 

Remove sweet potatoes and garlic from the oven. Carefully scoop out the insides of the sweet potatoes into a bowl. 

Puree garlic cloves in a food processor until smooth. Combine garlic puree, sweet potato, salt and pepper to taste and a few sprigs of fresh thyme in a bowl. Mix well. 

Stuff back into the sweet potato skins and place in the oven, uncovered for another 25 minutes. There may be a bit of leftover garlic puree, but that’s not a bad thing it can go with just about anything.

Wow this all looks incredible, I feel like I can smell that delicious roasted garlic smell just by looking at these photos, they are beautiful! Roasted garlic has got to be one of my all time favorite smells and tastes. So comforting! I wish I had one of these potatoes for lunch! YUM.

Aw, those sad salad bars are the worst … one time I bought hard boiled eggs that had actually formed a layer of ice from sitting on ice too long.
I love the sweet potato and roasted garlic combo! Sounds so tasty (and way better than salad bar food)

What an amazing idea! It’s definitely fall when a recipe of sweet potatoes and roasted garlic sounds like the most wonderful thing ever. :) Absolutely worth it!

roasted garlic puree, yes please! I loooove garlic and crispy sweet potato skins (ironically more than I like the actual sweet potatoes). :) this looks awesome!

the skins are so the best! I should try just sauteeing or roasting the skins, I wonder how that would be.

I’ve never considered the combination of these two flavors. White potatoes sure. I will give this a try though… it sounds like a very rustic flavor. Top with a dollop of coconut milk? :-)

I am totally one to not be afraid of garlic (unless i have some type of work/school thing) even though I apparently have some allergy to it- oh well!

Oh my. I know what you are talking about. When I made my roasted tomato and garlic soup, I literally wanted to eat the garlic with my hands. Apparently, though, too much garlic not only leaves you stinky, but it gives you very bad stomach cramps..boo!

Oh I would bathe in the smell of garlic cloves if it meant eating 1 cup worth of roasted garlic stuffed into a sweet potato. Gawsh, this looks fantastic.

oh, interesting idea! i’ve never had a sweet potato without the usual cinnamon + butter + brown sugar topping. this gives it a more savory/herby kick. do you put any sort of oil/butter on your tater at the end?

Not with this version, I just enjoyed it in all its garlicky glory. But yes usually butter!
