3 Ingredient Coffee Pancakes

Buzzzzzzzed.

Remember this Java Almond Butter I made and ate in a single day? Well first of all me eating jars of almond butter in a day has become so normal it’s actually sick and second of all it’s been too long since I’ve spiked anything with my drug of choice.

Stacks. Not only is that a great Bon Iver song, it also happens to be my latest breakfast obsession. Not complicated, 10 ingredient, can only make these on Sunday kind of stacks.

But another simple, (virtually) 3 ingredients, can make these on Wednesday kind of stacks. If you haven’t noticed yet I like to keep things as simple as possible.

Make these cuz you’re tired. Make these cuz it’s Wednesday. Make these cuz coffee is also your drug of choice.

Coffee Pancakes 

I call these 3 ingredient because the spices and baking powder and technically optional and the basic recipe calls for 3 simple ingredients. Grain, gluten, dairy and sugar free, serves 1. 

  • 2 Medium Eggs
  • 1 Medium Banana
  • 1 Tbsp Ground Coffee
  • 1/4 tsp baking powder
  • Salt, Cinnamon, Vanilla Extract 
  • Fat for cooking 

Heat your cast iron or griddle to medium heat and add your cooking fat such as butter, coconut oil, bacon fat etc.

In a bowl mash the banana. Add two eggs and whisk until thoroughly combined. Add in coffee grinds, a pinch of salt, baking powder, dash of cinnamon and dash of vanilla extract. Mix until combined. You could also use instant coffee but experiment with the amount as I’m not sure how the taste compares. 

Pour batter onto hot pan into pancake size of choice. Allow to set for a few minutes until bubbles form then gently flip and cook an additional minute. Add more fat onto the pan and continue to cook pancakes. 

Top with butter, syrup, almond butter or toppings of choice. Serves 1.

I love that you referred that Bon Iver song, because I’m obsessed with it. I’m sure I’d be obsessed with these stacks, too. Coffee is the best drug there is :)

Mmm, these look good! I don’t drink coffee, but I love the smell and I’ve been wanting to try adding a little to some breakfast meals such as your yogurt messes, smoothies (perhaps your Java Chip Smoothie) or these pancakes.

PS: I’m not sure if you’re being serious about your almond butter consumption (as I feel that bloggers highly exaggerate about their intake), but it makes me feel better about me regularly finishing a jar of nut butter in about 4 days. At least I make my own, right?

nope dead serious. happened once last week and then the other day with peanut butter… single day. IT’s good quick fuel for my crossfitting :)

I am just so impressed that you can make frickin’ pancakes without flour!!! Seriously, that is so awesome and I have every intention of making these the second I can stomach something other than whole wheat saltines (I’m pretty sure I have mono).
