Banana Bacon Scramble

This past weekend I spent an absurd number of hours cheering on a friend at his crossfit competition. 3 WODs, 4 parts to each workout, 7 heats, 42 teams= alllllll damn day. If I’m going to be anywhere all damn day though it was that competition with that friend.

Put a bunch of crossfitters in a waiting room on and off for 9 hours and you’re bound to overhear some good topics of conversation. Like…

How numb their bodies are from too many pre-workout supplements. Comparing types of almond butter. Lululemon. Food talk. More powdery substance talk. Technique and WODs and times and more food. And bacon, at least 4 times. People bond over food. And crossfitters bond over bacon.

Although the competition was a bit… extended, it really was exactly how I would want to spend my Saturday. The standards to enter the competition were pretty high so all the athletes there were killing it, and huge. So many large people. I always leave these things feeling motivated and like I need to put on 15-20 pounds of muscle.

I also love being surrounded by people who choose to also eat a radical diet. Makes one feel a little more normal in a world of bread and cheese, everywhere all the time.

So, bananas and bacon. Pick up some thick, local bacon, serve it up with some drippy yolks and black coffee and bond over it with someone who appreciates bacon as much as you and your radical diet.

Banana Bacon Scramble 

  • 1 Banana, semi-ripe
  • 2 pieces of thick bacon

Heat a skillet to medium heat. Cut bacon into small pieces and slice the banana into rounds. Put bacon in the pan and cook until nearly crispy. Add banana pieces and allow to cook on each side for 2-3 minutes until caramelized. Sprinkle with cinnamon and serve.

What an amazing idea! As one who loves a nice big breakfast, I’m going to need to try this out as a side dish ASAP.

That looks so awesome. I’m just getting on the bacon wagon, at the weekend I had sweet potato pancakes with bacon, almond butter and maple syrup. It was incredible, in fact a big blob of almond butter would be amazing on top of that scramble too!

My breakfasts usually look just like that, they’re just usually kept separate! I’ve never thought about cooking banana and bacon together but how could you go wrong?!

As a fellow radical-dieter, I totally agree … it’s nice to be around people who don’t think you’re crazy when you pass on the breadbasket. This looks so creative and different, and I’m definitely making it tomorrow for breakfast. Thanks!

this looks great!!! I wish I could mix fat and sugar like this, as I used to love doing that. But my skin does not like those combos :( enjoy them for me!
