HazelWalnut Butter

Paleo confession time:

I really like peanut butter and eat it with no reservations.

I don’t really think there’s anything wrong with some peanut butter, but there’s probably something wrong with the alarming rate that I can eat it at. And something something about anti-nutrients.

And that is exactly why I made hazel-walnut butter. To distract myself.

There are two reasons I can’t get away from peanut butter and need this distraction. 1) I make peanut butter once, sometimes twice, a week for my friend because it’s addicting and I roped myself into that one. And 2) because my dog will only take his lengthy pill lineup if they are submerged in some Skippy. So somewhere between my dog and my friend I’m constantly surrounded.

I’ve made almond butter, java almond butter, macadamia nut butter, and of course peanut butter. But this is a new territory for me… hazelwalnut butter. (side note: my first daughter will be named hazel even if that seems straight out of the 1800s)

So I made a small batch, about 1/2 a cup or so. Ate it in a day. And then went straight back to the peanut butter. So how’s that for a distraction.

Damn dog.

HazelWalnut Butter

I only made a very small batch, so I doubled what I used for the sake of the recipe. This should make about 1 cups worth which you can easily double for a normal 16oz jar. 

  • 2 cups unsalted Walnuts (halves, or pieces)
  • 2 cups unsalted Hazelnuts (mine were crushed but whole would work)
  • 1-2 Tbsp coconut oil
  • 1 tsp pure vanilla extract
  • Cinnamon, Nutmeg, Ginger

In a food processor combine all of the nuts and process for several minutes. You will probably need to stop the processor and scrape down the sides several times to keep things moving. Add in 1 or 2 Tbsp of unrefined coconut oil which will help smooth things out. A ball should form after several minutes, keep processing until it breaks down and becomes a smooth nut butter. Add more coconut oil if necessary. Keep processing and add vanilla and spices and a pinch of salt if you prefer. Taste and adjust spices if necessary.

1. I haven’t given up peanut butter, either! I eat with a banana every morning pre-WOD. There is something so satisfying about peanut butter that almond butter doesn’t seem to have.
2. My great-grandmother’s name was Hazel! I love it.

p.s. I think I’m sticking with the peanut butter for now. Pick your poison, right??

I am so not a peanut butter fan, but I LOVE almond butter and every nut butter you make looks amazing.

Mmm yummy butter! The moment I saw hazel+walnut I swooned. I bet this is really delish, especially because of the spice addition you put in Katie! I missed seeing your pretty pictures too :D And although I may not know much about Paleo requirements, I don’t see anything wrong with PB! Of course it’s known to not be the healthiest nut fat out there, but I think a healthy measure of it is good for our mind and body.

I grabbed a bag of raw hazelnuts on Sunday at Trader Joe’s with visions of hazelnut butter dancing in my head! But hazelnuts and walnuts?! Whoah! Can’t wait to try this!

I’m a paleo secret peanut-butter lover, too. Almond butter just isn’t the same with chocolate. And if you’re doing all this other great stuff for your body, doesn’t it all cancel out? I think yes.

I have to say, I am so glad you are back and I hope you keep on posting Katie. Yours was the first blog I started to follow and now that I’m fully steeped in the Paleo lifestyle it’s great your back. Your pictures and recipes are just awesome and has that unique touch.

Hi Katy! I just discovered your blog through your success story on Mark’s Daily Apple. Your story is vaguely similar to mine and it is refreshing to find other bloggers who focus on eating Paleo for health. Funny that you bring up the peanut butter issue-I have been battling a craving for it for the last few weeks! It is harder for me to resist because I don’t experience any immediate negative effects. (Except the constant craving, which cannot be good!)
